"Castor sugar" (or caster sugar) is a very fine sugar, but not as fine as powdered sugar. Think of it as the Goldilocks of sugar – not too coarse, not too fine, just right! 🐻 It dissolves quickly, making it perfect for baking and desserts. It's finer than granulated sugar but coarser than icing sugar. It gets its name from being traditionally ground in a castor (or caster) sugar shaker.
