Corn syrup is a thick, sweet liquid made from cornstarch. It's used in many processed foods to add sweetness, soften texture, and prevent crystallization of sugars. Unlike table sugar, it's mostly glucose, making it less prone to forming crystals. Think of it as the behind-the-scenes sweetener that keeps your candy chewy and your baked goods moist.
