Mock turtle soup is a soup that imitates the flavor and texture of green turtle soup, but made with less expensive ingredients, typically calf's head or other meats. It was created as an affordable alternative to the then-popular (and now largely unethical) turtle soup. Think of it as the 'vegan' version before veganism was cool. It uses seasonings and sometimes sherry to mimic the flavor of turtle meat. Often served with a hard-boiled egg.
